First published in 1898, The Golden Age Cook Book was written by Henrietta Marshall Latham Dwight (1838-1909). Henrietta and her husband James H. Latham, a Wells Fargo representative, moved to San Francisco in 1869. James died in 1876, and Henrietta pursued her interest in art, training in Paris in the 1880s, and living and painting in California in the 1890s. In addition to being a champion of the cause of animals, Henrietta's greatest interest seemed to be the humane education of children as the initial step of fundamental reform. After her death her children Edith and Milton Latham created the Latham Foundation, in memory of their parents, with the aim of "Promoting Respect For All Life Through Education." "I send this little book out into the world, first, to aid those who, having decided to adopt a bloodless diet, are still asking how they can be nourished without flesh; second, in the hope of gaining something further to protect "the speechless ones" who, having come down through the centuries under "the dominion of man, " have in their eyes the mute, appealing look of the helpless and oppressed. "
