Home Sausage Making, 4th Edition, by Reavis & Battaglia is a free NetGalley ebook that I read in early September.Among many guidelines, by-the-ways, precautions and stories & tips from sausage producers and farmers, there are recipes for all different types of sausages (i.e. beef, pork, lamb, veg, seafood, wild game, and mixtures of all the above that can be fresh/raw, precooked, smoked, or cured), then the book finishes with recipes that incorporate sausage. I tended to enjoy the bolder recipes, like for chorizo, paella, merguez, sausage and beer hand pies, pork and pistachio sausage, smoked kielbasa, Scotch quail eggs, andouille, curry sausage with cilantro and lime, salmon and dill sausage, linguica (love, love, love it), fried chicken sausage, lap cheong, Spanish tortilla, and mini corn dogs.
